Bacon Avocado Grilled Cheese Sandwich

INGREDIENTS

  • 8 slices of Kentucky Legend Bacon, cooked
  • 8 slices multigrain bread
  • 8 tsp mayonnaise
  • 1 ripe avocado, cut into slices
  • 8 slices of Havarti cheese
  • Tomato Aioli

DIRECTIONS

  1. Step 1: Cook the Bacon – In a frying pan or in the oven, cook the 8 slices of Kentucky Legend® Bacon.
  2. Step 2: Build the Grilled Cheese – Spread 1 side of each bread slice with 1 teaspoon mayonnaise. Layer 1 slice bread, mayo-side down, 1 tsp tomato aioli, 1 slice havarti cheese, 2 slices bacon, 3 wedges avocado, a 2nd slice of cheese. Top with 1 slice bread, mayo-side up.
  3. Step 3: Cook the Grilled Cheese: Heat 12-inch skillet or griddle over medium heat. Place 2 sandwiches into skillet; cook, turning once, 8-10 minutes or until golden brown and cheese is melted. Repeat with remaining sandwiches.

Tip: To get perfectly melty cheese, let the cheese sit out for 15 to 20 minutes before you start making these sandwiches.
Use ripe avocados for the best flavor and for the firmness. Pick avocados that give just a little bit when gently squeezed.
Depending on the size of the bread you are using, you may have to cut the bacon in half.
